Let’s Do Tomato Basil…Holy Delish!!

Eating with the Earth in Mind…Has never been so easy.

Plant your own Tomatoes and Basil for the Freshest Soup ever! 

Tomato Basil Soup with Chef Rafer

Serves 4-6

Ingredients and Method:

4 cups crushed tomatoes
4 c tomato juice or veggie Broth  
Simmer these together over medium heat for 30 min. Puree in small batches in blender or food processor with 14 basil leaves. (this is
important. you’re after smooth soup)

Add:

1 cup Unflavored Soy Milk or Silken tofu
1/4 lb butter
salt and pepper to taste

Heat through, being careful not to boil.

Making things at home I can control my sodium, fat and sugar intake…which is always great for my waistline.
